Who doesn’t love avocados? Live Well Alabama is combining avocados with an assortment of vegetables and serving up Southwest Avocado Toast.
“Our recipes are great for getting kids to help in the kitchen. Kids are more likely to try new foods when they helped make them," said Katie Funderburk, Alabama Extension nutrition specialist and registered dietitian
• Four slices of whole-wheat bread, toasted
• One avocado
• ½ cup black beans
• 2 tablespoons red onion, diced
• ½ cup corn
• ½ cup cherry tomatoes, halved
• Salt and pepper, to taste
• Lime juice, to taste
Canned vegetables are great but can be full of salt. Drain and rinse the black beans and other canned vegetables before using.
Cut the avocado in half, remove the pit and scoop out the inside. Spread the avocado on each slice of bread. In a bowl, mix the beans, corn, tomatoes and onion. If using canned ingredients, be sure to drain and rinse the vegetables. Add this mixture onto each slice of bread, and top with salt, pepper and lime juice.
