Jacob and Grace Shelton will open Colt Coffee Co. Monday, a coffee trailer based at Vintage Coffee & Clutter in the former Mimi’s location at 12 3rd Street W.
“Our trailer will be just off Main Street,” said Grace, who will primarily be running the business. It will be a walk-up business for now. A drive-through could come later. They will offer frappes, lattes, hot chocolate, anything a regular coffee shop offers. They will also have assorted pre-packaged baked goods.
It is a veteran-owned business. Jacob and Grace met when both were stationed at Ft. Gordon, Georgia. She did a little more than 3 years and he did a little more than 6, including a tour in Iraq. He is a network engineer with the Missile Defense Agency today and she is a photographer.
Colt Coffee Co. will be open 5:30-10:00 a.m. Monday-Friday and 8 a.m. until 11 a.m. on Saturdays.
“We’ve already done a couple of events in Grant,” Grace said. “Christmas on Main was a smashing success. We also did DAR Family Night and we are now DAR’s preferred coffee vendor.”
The Sheltons have two children, a son and a daughter. Son Kallen is 5 and daughter Ella is 4.
“You’ll be seeing me as well as the kids when you stop by for coffee,” Grace said.
